  • 1 bunch asparagus spears (about 20 medium-thick spears), trimmed
  • 10 slices prosciutto, thinly sliced
  • 1 package puff pastry sheets (2 sheets, thawed)
  • 1 tablespoon olive oil
  • 1/4 cup finely grated Parmesan cheese (optional)
  • 1/2 teaspoon garlic powder
  • Freshly ground black pepper, to taste
  • 1 large egg beaten with 1 tablespoon water (egg wash)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Rinse and trim the tough ends of the asparagus (about 1 to 1.5 inches). Pat dry thoroughly.
  3. Roll out one thawed puff pastry sheet on a lightly floured surface. Cut into 10 equal rectangles (about 3×4 inches each). Keep the second sheet refrigerated until ready.
  4. Take 2 asparagus spears and wrap them tightly together with one slice of prosciutto.
  5. Lightly brush each pastry rectangle with olive oil. Sprinkle garlic powder, black pepper, and Parmesan cheese if using.
  6. Place one prosciutto-wrapped asparagus pair diagonally on each pastry rectangle. Fold the pastry around the spears, sealing edges by pressing gently with fingers or a fork. Brush sealed edges with egg wash.
  7. Brush the entire surface of each bundle with egg wash for a golden, crispy finish.
  8. Place bundles on the prepared baking sheet about 1 inch apart. Bake for 15-18 minutes until puff pastry is puffed and golden brown.
  9. Transfer bundles to a cooling rack for 5 minutes before serving to keep bottoms crisp.

Notes

Dry asparagus thoroughly before wrapping to prevent soggy pastry. Do not overcrowd baking sheet for even puffing. Egg wash is key for golden crust. Bundles can be assembled ahead and refrigerated or frozen before baking. Serve warm or at room temperature with lemon aioli or mustard dip.
