  • 1/4 cup packed brown sugar (50g)
  • 1 teaspoon garlic powder
  • 1/2 teaspoon freshly ground black pepper
  • 1 tablespoon olive oil or melted butter
  • Pinch of red chili flakes (optional)
  • Smoked paprika (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or foil for easy cleanup.
  2. Trim and blanch the green beans: rinse and snap off ends. Boil in salted water for 2-3 minutes until tender-crisp. Transfer immediately to ice water, then drain and pat dry thoroughly.
  3. In a large bowl, toss the blanched green beans with olive oil or melted butter, garlic powder, and black pepper until evenly coated.
  4. Form bundles by gathering 8-10 green beans and wrapping one slice of bacon tightly around each bundle. Place bundles seam side down on the prepared baking sheet.
  5. In a small bowl, mix brown sugar with a pinch of red chili flakes if using. Sprinkle the brown sugar mixture generously over each bacon-wrapped bundle.
  6. Bake for 20-25 minutes, turning bundles halfway through (around 12 minutes) using kitchen tongs for even cooking and caramelization.
  7. Remove from oven and let rest for 5 minutes before serving warm.
