  • 1 tbsp baking powder
  • 1/4 cup (50g) granulated sugar

  • 2 tbsp fresh lemon zest
  • 3/4 cup (180ml) heavy cream
  • 1 large egg, room temperature
  • 1 cup (150g) fresh or frozen blueberries
  • For the vanilla glaze:
  • 1 cup (120g) powdered sugar
  • 1 tsp vanilla extract
  • 23 tbsp milk or cream

Instructions

  1. Brown the butter: Melt the unsalted butter over medium heat in a heavy-bottomed skillet. Stir frequently as it foams and then starts turning a golden brown with nutty aromas. Remove from heat and let it cool slightly.
  2. Mix dry ingredients: In a large bowl, whisk together flour, baking powder, granulated sugar, salt, and lemon zest.
  3. Combine wet ingredients: In a separate bowl, whisk heavy cream, egg, and slightly cooled brown butter until smooth.
  4. Form the dough: Pour wet mixture into dry ingredients and gently fold using a spatula until just combined. Fold in blueberries carefully to avoid bursting.
  5. Shape the scones: Turn dough onto a lightly floured surface. Pat into a 7-inch circle about 1 inch thick. Cut into 8 wedges with a sharp knife.
  6. Bake: Place wedges on a parchment-lined baking sheet, leaving space between. Bake at 400°F (200°C) for 18-22 minutes until golden and crisp on edges.
  7. Prepare the vanilla glaze: While baking, whisk powdered sugar, vanilla extract, and milk or cream until smooth and drizzle-able.
  8. Cool & glaze: Let scones cool on a rack for 10 minutes before drizzling glaze over the top.
