Instructions

  1. Rinse and dry the cauliflower head, then chop into bite-sized florets about 1 to 1.5 inches.
  2. In a large bowl, whisk together flour, garlic powder, smoked paprika, and salt. Slowly add cold water, whisking until smooth and slightly thick but pourable.
  3. Heat 2 to 3 inches of vegetable oil in a frying pan or pot to 350°F (175°C).
  4. Dip cauliflower florets into the batter, letting excess drip off, then fry in batches for 4 to 5 minutes until golden and crispy.
  5. Drain fried florets on a baking sheet lined with paper towels and keep warm in a low oven.
  6. Whisk together hot sauce, melted butter, and honey or maple syrup in a small bowl.

  8. In another bowl, combine mayonnaise, sour cream or Greek yogurt, lemon juice, garlic powder, dried dill, smoked paprika, cayenne pepper, salt, and pepper. Whisk until smooth and refrigerate.
