  • 2 cups (300g) shredded cooked chicken (rotisserie recommended)
  • 8 oz (225g) cream cheese, softened
  • ½ cup (120ml) buffalo sauce (Frank’s RedHot recommended)
  • 1 tbsp ranch seasoning mix
  • 1 cup (100g) shredded cheddar cheese
  • ½ cup (50g) shredded mozzarella cheese
  • 1 package (about 11 oz / 312g) store-bought breadstick dough
  • 1 tbsp olive oil
  • Optional garnish: chopped fresh parsley or green onions

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or a silicone mat.
  2. In a large mixing bowl, combine shredded cooked chicken, softened cream cheese, buffalo sauce, ranch seasoning, shredded cheddar cheese, and shredded mozzarella cheese. Mix until creamy and well combined. Add a splash of milk or extra buffalo sauce if mixture is too thick.
  3. Roll out the breadstick dough on a lightly floured surface into a 12×10 inch (30×25 cm) rectangle. Cut the dough into 1-inch (2.5 cm) wide strips.
  4. Place about 1 tablespoon of the buffalo chicken dip filling at one end of each dough strip. Roll the dough tightly around the filling and pinch the ends to seal. Dust hands with flour if dough is sticky.
  5. Arrange the wrapped bites seam-side down on the prepared baking sheet, spacing about 1 inch (2.5 cm) apart.
  6. Brush the tops of the bites lightly with olive oil.
  7. Bake for 15-18 minutes until golden brown and filling is hot and bubbly. Check at 15 minutes to avoid over-browning.
  8. Let the bites cool on a wire rack for 5 minutes before serving.

Notes

Use warm, softened cream cheese for smooth filling. Drain excess liquid from chicken to avoid soggy bites. Seal dough edges firmly to prevent leaks. Brush with olive oil for a golden crust. Let bites cool before eating to avoid burns. Can be made ahead and refrigerated for up to 24 hours before baking.
