  • 2 cups (200g) shredded cheese blend (sharp cheddar and Monterey Jack)
  • 1 cup (150g) cooked protein (ground beef, shredded chicken, or black beans) – optional
  • 1/2 cup (75g) diced tomatoes
  • 1/2 cup (75g) sliced jalapeños
  • 1/2 cup (75g) finely chopped onions
  • 1/4 cup (40g) sliced black olives
  • Fresh cilantro, roughly chopped (optional)
  • Sour cream or Greek yogurt for serving
  • Pinch of cumin
  • Pinch of chili powder
  • Pinch of garlic powder
  • Olive oil or butter, for brushing foil

Instructions

  1. Build a medium-hot campfire and let it burn down to glowing embers (about 30-40 minutes).
  2. Chop tomatoes, onions, jalapeños, and cilantro. Prepare and season cooked protein if using.
  3. Tear off large sheets of heavy-duty aluminum foil (about 12×12 inches). Lightly brush foil with olive oil to prevent sticking.
  4. On each foil sheet, spread a single layer of tortilla chips (about 2 cups or 60g). Sprinkle half the shredded cheese evenly over the chips.
  5. Add cooked protein or beans, followed by chopped veggies and olives. Finish with remaining cheese on top. Season lightly with cumin, chili powder, and garlic powder.
  6. Fold the foil over the nachos to create a sealed packet, folding edges tightly to trap heat and steam. Double wrap if needed.
  7. Place packets on campfire grill grate or embers. Cook for 10-12 minutes, flipping once halfway through with tongs for even heating.
  8. Remove packets carefully using gloves or tongs. Open cautiously to avoid steam. Garnish with fresh cilantro and dollops of sour cream or Greek yogurt before serving.

Use sturdy tortilla chips to avoid sogginess. Brush foil with olive oil to prevent sticking and encourage crisping. Avoid high flames; cook over embers or low heat for even melting and crispiness.
