  • Thick-sliced Italian or French bread (day-old bread works best)
  • ½ cup (115g) unsalted butter, softened
  • 3 garlic cloves, minced
  • 1½ cups shredded mozzarella cheese (about 150g)
  • ½ cup shredded Parmesan cheese (about 50g)
  • 1 tbsp chopped fresh rosemary
  • 1 tbsp chopped fresh thyme
  • 1 tbsp chopped flat-leaf parsley
  • Pinch of salt, to taste
  • Freshly ground black pepper, to taste
  • Red pepper flakes (optional)

Instructions

  1. Preheat your oven to 425°F (220°C) or set your broiler to high and position the oven rack about 6 inches from the heat source.
  2. In a mixing bowl, combine ½ cup softened unsalted butter with 3 minced garlic cloves. Mix thoroughly until evenly distributed. Add a pinch of salt and black pepper.
  3. Cut the loaf into thick slices, about 1 inch thick. Day-old bread is best.
  4. Generously spread the garlic butter mixture over each slice, covering the surface evenly including edges.
  5. Sprinkle 1½ cups shredded mozzarella evenly over the bread slices, then top with ½ cup grated Parmesan.
  6. Scatter 1 tbsp each of chopped fresh rosemary, thyme, and parsley over the cheese. Add red pepper flakes if desired.
  7. Place the baking sheet in the oven and bake for 8-10 minutes, or broil for 3-5 minutes, watching closely until cheese is bubbly and golden and bread edges are crispy and browned.
  8. Remove from oven and let cool for 2-3 minutes to allow cheese to set slightly.
  9. Slice into halves or quarters and serve warm.

Notes

Use day-old bread for best crispiness. If bread browns too quickly before cheese melts, tent loosely with foil. Fresh herbs added just before baking preserve flavor. For vegan version, use dairy-free butter and plant-based cheese. Reheat in toaster oven or broiler to maintain crispness; avoid microwave.
