  • 2 cups (300g) cooked shredded or diced chicken (rotisserie chicken recommended)
  • 2 tablespoons taco seasoning (store-bought or homemade with chili powder, cumin, garlic powder, and salt)
  • 6 medium flour tortillas (8-inch/20cm)
  • 1 cup (100g) shredded cheddar or Mexican blend cheese
  • 1 cup (120g) crushed tortilla chips or panko breadcrumbs
  • Optional: 2 tablespoons cooking oil for brushing or spritzing before baking

Instructions

  1. Preheat oven to 400°F (200°C) or air fryer to 375°F (190°C). Line a baking sheet with parchment paper if baking.
  2. In a mixing bowl, toss shredded chicken with taco seasoning until evenly coated. Stir in shredded cheese.
  3. Lay one flour tortilla flat. Spoon about ⅓ cup (80g) of chicken mixture in a line across the center. Roll tightly but gently.
  4. Spread crushed tortilla chips or panko breadcrumbs on a plate. Roll each filled tortilla in the coating, pressing lightly to adhere.
  5. Place coated rollups seam-side down on baking sheet. Lightly brush or spritz with cooking oil.
  6. Bake for 15-18 minutes, turning halfway, until golden brown and cheese is melty. For air fryer, cook 12-15 minutes, shaking basket halfway.
  7. Let rollups rest for 3-5 minutes before serving to allow cheese to set.

Notes

Use small-curd cooked chicken for better seasoning absorption. Warm tortillas briefly to prevent cracking. Lightly oil rollups before baking for extra crispness. Turn rollups halfway through baking for even browning. Can be made gluten-free by substituting corn tortillas and gluten-free coating.
