Ingredients

  • Tortilla chips (sturdy, thick-cut, about 6 cups)
  • Sharp cheddar cheese, shredded (2 cups / 200g)
  • Monterey Jack cheese, shredded (1 cup / 100g)
  • Jalapeños, sliced thin, fresh or pickled (optional)
  • Green onions, chopped
  • Black olives, sliced (optional)
  • Tomatoes, diced
  • Sour cream, for serving
  • Fresh cilantro, roughly chopped (optional)
  • Ground cumin, a pinch
  • Smoked paprika, a dash (optional)
  • Salt, to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Line a large rimmed baking sheet with parchment paper or a silicone baking mat.
  3. Spread the tortilla chips evenly on the baking sheet, avoiding heavy overlapping.
  4. Sprinkle a pinch of ground cumin and smoked paprika over the chips.
  5. In a bowl, mix the shredded sharp cheddar and Monterey Jack cheeses.
  6. Scatter the cheese blend evenly over the chips.
  7. Add sliced jalapeños, black olives, and diced tomatoes on top.
  8. Bake in the preheated oven for about 8-10 minutes until the cheese is melted and bubbling but chips remain crispy.
  9. Remove from oven and sprinkle chopped green onions and fresh cilantro on top.
  10. Serve immediately with dollops of sour cream on the side.

Use freshly shredded cheese for better melting and avoid pre-shredded cheese with anti-caking agents. To keep chips crispy, bake chips with spices first before adding cheese and toppings. Serve immediately for best texture. For extra crispiness, broil for 2 minutes at the end but watch closely to avoid burning.
