Ingredients

Scale
  • 3 to 4 pounds bone-in, skin-on turkey breast roast
  • 2 tablespoons olive oil or melted butter
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon paprika
  • 1 ½ teaspoons salt
  • ½ teaspoon freshly ground black pepper
  • ½ cup chicken broth or water
  • Fresh herb sprigs (rosemary or thyme, optional)

Instructions

  1. Pat the turkey breast dry with paper towels to remove excess moisture.
  2. In a small bowl, combine garlic powder, onion powder, dried thyme, dried rosemary, paprika, salt, and black pepper. Stir until well blended.
  3. Rub the turkey breast all over with olive oil or melted butter. Sprinkle the seasoning mix evenly over the skin and inside any crevices.
  4. Pour the chicken broth or water into the bottom of the crock pot. Place the turkey breast, skin side up, on the rack or directly in the liquid. Add fresh herb sprigs on top or inside the cavity if using.
  5. Cover and cook on low for 4 to 5 hours, or until the internal temperature reaches 155°F (68°C).
  6. About 15 minutes before the turkey finishes, preheat your oven’s broiler on high.
  7. Carefully lift the turkey breast from the crock pot using tongs and place it skin side up on a baking sheet or roasting pan.
  8. Broil the turkey breast for 4 to 6 minutes, watching closely to avoid burning, until the skin is golden brown and crispy.
  9. Remove the turkey from the oven and let it rest for 10 to 15 minutes to allow juices to redistribute.
  10. Carve the turkey breast against the grain into thick, juicy slices and serve.

Notes

Patting the turkey skin dry before cooking is essential for crispiness. The broiler step is non-negotiable for a golden, crispy skin. Rotate the pan under the broiler if browning unevenly. Use a meat thermometer to avoid overcooking. Rest the turkey before slicing to keep it juicy.
