  • 3 tbsp unsalted butter
  • 3 cloves garlic, minced
  • 1 tbsp olive oil
  • 8 oz pasta of choice (fettuccine or penne recommended)
  • 1 cup heavy cream or half-and-half (milk for lighter option)
  • 1 cup freshly grated Parmesan cheese
  • 2 tbsp unsalted butter
  • 2 cloves garlic, minced
  • Salt and pepper, to taste
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. Pat the chicken pieces dry with paper towels. In a shallow bowl, mix the flour, garlic powder, salt, and pepper. Toss the chicken pieces in the flour mixture until well coated.
  2. Heat 1 tablespoon olive oil and 2 tablespoons butter in a large skillet over medium-high heat. Add the chicken bites in a single layer and cook for 3-4 minutes per side until golden and crispy. Add the minced garlic during the last minute. Remove chicken and set aside.
  3. Bring a large pot of salted water to a boil. Cook pasta according to package instructions until al dente (8-10 minutes). Drain, reserving 1/2 cup pasta water.
  4. In the same skillet, melt 2 tablespoons butter over medium heat. Add remaining minced garlic and sauté for 30 seconds until fragrant. Pour in heavy cream and bring to a gentle simmer.
  5. Slowly add grated Parmesan cheese, stirring until melted and smooth. If sauce is too thick, add reserved pasta water a tablespoon at a time. Season with salt and pepper.
  6. Toss cooked pasta into the skillet with sauce, mixing well. Return chicken bites to skillet and fold together. Heat through for 2 minutes.
  7. Serve immediately, garnished with chopped fresh parsley if desired.
