  • 45 garlic cloves, minced fresh
  • 2 tablespoons fresh thyme, roughly chopped
  • 2 tablespoons fresh parsley, roughly chopped
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • 1 tablespoon olive oil
  • Optional: pinch of red pepper flakes
  • Optional: lemon zest or fresh lemon juice for serving

Instructions

  1. Pat the chicken bites dry with paper towels to remove excess moisture. Season evenly with salt and freshly ground black pepper. Let rest for 5 minutes.
  2. Heat a large heavy-bottomed skillet or cast-iron pan over medium-high heat. Add olive oil and warm until shimmering but not smoking, about 1-2 minutes.
  3. Add chicken bites in a single layer without overcrowding the pan. Cook undisturbed for 3-4 minutes until the underside is golden and crispy. Flip and cook another 3-4 minutes until cooked through and internal temperature reaches 165°F (74°C).
  4. Reduce heat to medium-low. Push chicken to one side of the pan. Add butter to the empty side and let it melt and foam.
  5. Stir in minced garlic and cook gently for about 1 minute until fragrant but not browned.
  6. Toss chicken in the garlic butter sauce to coat evenly. Cook for another 1-2 minutes to marry flavors, watching that garlic does not burn.
  7. Remove pan from heat and sprinkle chopped fresh thyme and parsley over the chicken. Toss gently to distribute herbs evenly.
  8. Serve immediately while hot and crispy. Optionally, add a squeeze of fresh lemon juice for brightness.

Patting the chicken dry is crucial for crispiness. Avoid overcrowding the pan to maintain high heat and crisp edges. Add garlic after chicken is mostly cooked to prevent bitterness.
