  • 4 bone-in, skin-on chicken thighs (about 1.5 pounds / 700 grams)
  • 4 cloves garlic, minced
  • ½ cup finely grated Parmesan cheese
  • ½ cup panko breadcrumbs
  • 2 tablespoons olive oil
  • 1 teaspoon dried Italian herbs (oregano, basil, thyme)
  • Salt and pepper to taste
  • Zest of 1 lemon (optional)
  • 1 tablespoon melted butter

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, combine Parmesan, panko breadcrumbs, minced garlic, dried Italian herbs, salt (about ½ teaspoon), pepper, and lemon zest if using. Mix well.
  3. Pat the chicken thighs dry with paper towels. Season both sides with salt and pepper (about ½ teaspoon each side).
  4. Heat olive oil in an oven-safe skillet over medium-high heat. Once hot, place chicken thighs skin-side down and sear without moving for 5-6 minutes until skin is golden brown and crispy.
  5. Flip the chicken thighs skin-side up. Brush the skin with melted butter.
  6. Press the Parmesan garlic breadcrumb mixture firmly onto the skin side of the chicken.
  7. Transfer the skillet to the preheated oven and bake for 15-20 minutes until the chicken reaches an internal temperature of 165°F (74°C) and the crust is golden and bubbly.
  8. Remove from oven and let rest for 5 minutes before serving.

Notes

Pat chicken dry before cooking for extra crispy skin. Avoid overcrowding the pan to prevent sogginess. Use a meat thermometer to ensure chicken reaches 165°F. If pan is not oven-safe, transfer chicken to a baking dish after searing. Reheat leftovers in the oven to maintain crispiness. For gluten-free, substitute panko with gluten-free breadcrumbs or almond flour. For dairy-free, use vegan parmesan substitute and olive oil instead of butter.
