A quick and easy grilled cheese sandwich with a crispy exterior and a gooey, melty blend of sharp cheddar, mozzarella, and Swiss cheeses. Perfect comfort food with a gourmet twist.

  • Thick slices of sourdough or rustic white bread (San Francisco-style sourdough recommended)
  • 1/2 cup shredded sharp cheddar cheese (about 50g / 1.75 oz)
  • 1/2 cup shredded mozzarella cheese (about 50g / 1.75 oz)
  • 2 ounces thinly sliced Swiss cheese (about 60g)
  • Unsalted butter, softened (for spreading generously on bread)
  • Optional: pinch of garlic powder or smoked paprika for sprinkling on butter

Instructions

  1. Shred about 1/2 cup sharp cheddar, 1/2 cup mozzarella, and slice 2 ounces Swiss cheese thinly. Set aside.
  2. Spread a generous layer of softened unsalted butter on one side of each bread slice. Sprinkle a pinch of garlic powder or smoked paprika onto the butter if desired.
  3. Place one slice of bread, butter side down, on a clean surface. Layer the cheddar, mozzarella, and Swiss cheese evenly on top. Top with the second slice, butter side up.
  4. Warm a cast-iron or non-stick skillet over medium heat (about 325°F / 160°C).
  5. Place the sandwich in the skillet. Cook for about 3-4 minutes on one side, pressing down gently with a spatula. When the bread is golden and crispy, carefully flip it over and cook for another 3-4 minutes.
  6. If the cheese isn’t fully melted but the bread is browned, lower the heat and cover the pan loosely with a lid for 1-2 minutes to finish melting the cheese.
  7. Transfer to a cutting board and slice diagonally. Serve immediately while hot.

Notes

Butter both sides of the bread generously for even browning and a crispy crust. Cook over medium or medium-low heat to allow cheese to melt without burning the bread. Use freshly shredded cheese for better melt and texture. Cover the skillet briefly if cheese isn’t melting but bread is browning too fast. Avoid microwaving leftovers to keep bread crispy; reheat in skillet instead.
