Instructions

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it.
  2. Toss the trimmed and halved green beans with olive oil, salt, and pepper. Spread them in a single layer on the baking sheet. Roast for 15-18 minutes until tender but still crisp, stirring halfway through. They should have a slight caramelized edge.
  3. While the beans roast, melt the butter in a large skillet over medium heat. Add the thinly sliced onions and a pinch of salt. Cook slowly, stirring often, until the onions are soft and golden brown, about 15-20 minutes.
  4. Add minced garlic and flour to the onions. Stir for 1-2 minutes to cook off the raw flour taste, creating a roux.
  5. Slowly whisk in the broth and heavy cream, then add grated Parmesan and fresh thyme. Cook, stirring constantly, until the sauce thickens, about 4-5 minutes. Taste and adjust seasoning as needed.
  6. Combine the roasted green beans with the creamy onion sauce in a large mixing bowl. Stir gently to coat the beans evenly.
  7. Transfer the mixture to your casserole dish, spreading it out evenly.
  8. Toss the panko breadcrumbs with a little melted butter and a pinch of salt. Sprinkle this evenly over the casserole.
  9. Bake the casserole at 375°F (190°C) for 20-25 minutes, until the topping is golden and crispy, and the sauce is bubbly around the edges.
