  • 1 whole chicken (4 to 5 pounds / 1.8 to 2.3 kg), fresh or thawed, ideally organic or free-range
  • 2 tablespoons olive oil (30 ml)
  • 1 to 1.5 teaspoons kosher salt (5 to 7.5 g)
  • 1 teaspoon freshly ground black pepper (2 g)
  • 1 teaspoon garlic powder (2 g)
  • 1 teaspoon onion powder (2 g)
  • 1 teaspoon paprika (2 g), smoked paprika optional
  • 1/2 teaspoon dried thyme (1 g)
  • 1 small lemon, halved (optional)
  • A few sprigs fresh rosemary or thyme (optional)

Instructions

  1. Remove any giblets from the chicken cavity and pat the chicken dry with paper towels (5 minutes).
  2. Rub olive oil all over the chicken, including under the skin if possible. Combine salt, pepper, garlic powder, onion powder, paprika, and dried thyme in a small bowl and sprinkle evenly over the chicken (5 minutes).
  3. Place lemon halves and fresh herb sprigs inside the chicken cavity (2 minutes).
  4. Optional: Truss the chicken by tying the legs together and tucking the wings under the body for even cooking and neat appearance (3 minutes).
  5. Insert the rotisserie spit through the chicken and secure it with the forks on both ends. Place the spit onto the rotisserie cradle inside the Ninja Foodi (3 minutes).
  6. Close the lid and select the rotisserie function. Set the timer for 50 minutes. The Ninja Foodi will rotate the chicken continuously, crisping the skin evenly (50 minutes).
  7. Check doneness by inserting a meat thermometer into the thickest part of the thigh; it should read 165°F (74°C). If not done, cook for an additional 5 to 10 minutes (2 minutes).
  8. Carefully remove the spit using tongs or heat-resistant gloves. Let the chicken rest on a cutting board for 10 minutes before carving to allow juices to redistribute (10 minutes).

Notes

Pat the chicken dry twice for extra crispy skin. Season under the skin for deeper flavor. Use a meat thermometer to ensure perfect doneness. Rest the chicken after cooking to keep it juicy. If skin is not crispy enough after resting, air crisp for 3-5 minutes. Trussing is optional but helps with even cooking and presentation.
