  • 3 medium zucchini, grated
  • 2 large eggs, room temperature
  • ½ cup (60g) all-purpose flour (can substitute almond flour for gluten-free)
  • ¼ cup chopped fresh dill or parsley
  • 2 cloves garlic, minced
  • 1 teaspoon lemon zest
  • Salt and pepper to taste
  • Olive oil for frying
  • 1 cup (240ml) plain Greek yogurt
  • 1 tablespoon fresh lemon juice

Instructions

  1. Wash and grate the zucchini using a box grater or food processor grating attachment to yield about 3 cups (300g).
  2. Transfer grated zucchini to a clean kitchen towel or cheesecloth and twist firmly to squeeze out as much liquid as possible (2-3 minutes).
  3. In a large bowl, combine squeezed zucchini, eggs, flour, chopped herbs, lemon zest, minced garlic, salt, and pepper. Stir gently until just combined.
  4. Heat 2 tablespoons olive oil over medium heat in a non-stick or cast iron skillet until hot but not smoking.
  5. Drop spoonfuls of batter into the pan, flattening into 2-3 inch rounds. Cook for 3-4 minutes until golden and crisp on one side.
  6. Flip carefully and cook the other side for another 3 minutes until golden and cooked through. Fry in batches, adding oil as needed.
  7. Transfer cooked fritters to a paper towel-lined plate to drain excess oil and keep warm in a low oven (200°F / 90°C).
  8. For the garlic yogurt dip, mix Greek yogurt with lemon juice, 1 minced garlic clove, and a pinch of salt. Chill if possible.
  9. Serve fritters warm or at room temperature with the garlic yogurt dip on the side, garnished with fresh herbs or lemon zest.

Notes

Pressing out zucchini moisture is essential to avoid soggy fritters. Use medium heat to prevent burning. Cook in batches to maintain oil temperature. For gluten-free, substitute all-purpose flour with almond flour. Garlic yogurt dip can be substituted with regular or dairy-free yogurt for vegan option. Reheat fritters in skillet to keep crispiness; avoid microwave.
