  • 1 can (15 oz / 425 g) chickpeas, drained and rinsed
  • ⅓ cup (30 g) finely grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 tablespoon olive oil
  • ½ teaspoon salt
  • ¼ teaspoon freshly ground black pepper
  • Optional: ½ teaspoon smoked paprika
  • Optional: a pinch of chili flakes

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. Drain and rinse the chickpeas using a colander. Pat them dry thoroughly with a clean kitchen towel or paper towels.
  3. Toss the chickpeas with olive oil, salt, black pepper, and garlic powder in a mixing bowl to coat evenly.
  4. Spread chickpeas in a single layer on the prepared baking sheet, ensuring they have room to breathe.
  5. Roast in the oven for 20 minutes. Halfway through (around 10 minutes), shake or stir the chickpeas for even browning.
  6. Remove the pan from the oven and sprinkle the finely grated Parmesan evenly over the chickpeas. Toss gently to coat.
  7. Return to the oven and roast for an additional 10 minutes to let the cheese melt and crisp up.
  8. Remove from oven and let the chickpeas cool slightly on the baking sheet to crisp further before serving.

Notes

Dry chickpeas thoroughly before roasting to ensure crispiness. Toss chickpeas halfway through cooking for even browning. Fine grate Parmesan to help it crisp properly. Store leftovers in an airtight container at room temperature for up to 3 days and re-crisp in a 350°F oven for 5 minutes before serving.
