These crispy prosciutto-wrapped asparagus bites are a quick and easy appetizer featuring salty, savory prosciutto wrapped around tender asparagus, baked to perfection for a crunchy and flavorful snack.

  • 1 bunch fresh asparagus spears (about 1 pound or 450 grams), trimmed
  • 8 to 10 thin slices prosciutto
  • 1 to 2 tablespoons extra virgin olive oil
  • Freshly ground black pepper, to taste
  • 2 tablespoons grated Parmesan cheese (optional)
  • Zest of 1 lemon (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Trim the asparagus by snapping or cutting off the woody ends (about the bottom inch).
  3. Place the trimmed asparagus in a mixing bowl. Drizzle with 1 to 2 tablespoons of extra virgin olive oil and sprinkle with freshly ground black pepper. Toss gently to coat evenly.
  4. Lay out a slice of prosciutto on a flat surface. Place 2 to 3 asparagus spears at one end of the slice and roll tightly to wrap the prosciutto around the spears. Repeat with remaining asparagus and prosciutto slices. Cut prosciutto slices in half if needed for smaller bites.
  5. Line a baking sheet with parchment paper or a silicone baking mat. Place each prosciutto-wrapped asparagus bundle seam side down on the sheet.
  6. If using, sprinkle grated Parmesan cheese and lemon zest evenly over the bundles.
  7. Bake in the preheated oven for 12 to 15 minutes, turning once halfway through with tongs, until the prosciutto is crispy and golden and the asparagus is tender but still firm.
  8. Check doneness by cutting into one bundle; if needed, bake a minute or two longer, watching closely to avoid burning.
  9. Serve warm immediately for best texture.

Notes

Do not overcrowd the baking sheet to ensure the prosciutto crisps properly. Let asparagus dry thoroughly before wrapping to prevent sogginess. Use thin slices of prosciutto for best crispiness. Avoid adding extra salt as prosciutto is already salty. You can prepare wrapped asparagus ahead and refrigerate up to 24 hours before baking.
