  • Fresh asparagus spears (6–8 inches long)
  • Thinly sliced prosciutto (dry-cured, such as prosciutto di Parma)
  • ½ cup mayonnaise
  • 1 teaspoon fresh lemon juice
  • 1 teaspoon lemon zest
  • 1 small garlic clove, minced
  • Splash of extra virgin olive oil
  • Freshly ground black pepper, to taste
  • Optional: smoked paprika or red pepper flakes for aioli kick

Instructions

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or a silicone mat.
  2. Rinse asparagus spears and pat dry. Trim off woody ends by bending each stalk until it snaps naturally (about 1–2 inches).
  3. Wrap one slice of prosciutto snugly around each asparagus spear, spiraling from bottom to top.
  4. Arrange wrapped asparagus in a single layer on the baking sheet, seam side down, leaving space between each.
  5. Brush lightly with olive oil to help prosciutto crisp.
  6. Bake for 12–15 minutes, checking after 10 minutes. Prosciutto should be crispy and asparagus tender but slightly firm. Add 2 minutes if you prefer softer asparagus.
  7. While baking, prepare lemon aioli by mixing mayonnaise, lemon juice, lemon zest, minced garlic, black pepper, and a splash of olive oil in a bowl. Stir until smooth and chill until serving.
  8. Serve warm with lemon aioli on the side for dipping.

Notes

Use thin slices of prosciutto for best crispness. Avoid overcrowding the pan to prevent sogginess. Pat asparagus dry before wrapping. Broil for 1–2 minutes at the end if prosciutto isn’t crisping enough. Prepare aioli fresh to keep lemon zest vibrant. Leftovers can be refrigerated up to 2 days; reheat under broiler to restore crispness.
