  • 1 cup (220 grams) packed light brown sugar
  • 1 teaspoon (5 ml) vanilla extract
  • 2 cups (340 grams) semi-sweet chocolate chips
  • Optional toppings: chopped pecans, sliced almonds, sea salt flakes, crushed peppermint candies

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×13-inch baking sheet with foil or parchment paper, letting edges hang over sides for easy removal.
  2. Lay saltine crackers in a single, tight layer on the prepared baking sheet without overlapping.
  3. In a medium saucepan, combine melted butter and packed light brown sugar. Bring to a boil over medium heat, stirring constantly. Boil and stir for exactly 3 minutes.
  4. Remove from heat and stir in vanilla extract carefully.
  5. Immediately pour hot caramel evenly over saltines and spread gently with a spatula or back of a spoon.
  6. Bake in preheated oven for 5-7 minutes until caramel bubbles and thickens, watching closely to avoid burning.
  7. Remove from oven and sprinkle semi-sweet chocolate chips evenly over hot caramel. Let sit for about 5 minutes to soften.
  8. Spread melted chocolate evenly over caramel layer using an offset spatula or butter knife.
  9. Add optional toppings like chopped nuts, sea salt flakes, or crushed peppermint while chocolate is still warm.
  10. Let toffee cool at room temperature until set, about 2 hours, or refrigerate for 30-45 minutes for faster setting.
  11. Use foil edges to lift toffee from pan and break into pieces.

Do not skip baking the caramel-coated crackers to achieve the perfect crispy texture. Stir constantly while boiling caramel to prevent burning. Use classic salted saltines for best texture. For dairy-free or gluten-free versions, substitute ingredients accordingly. Chocolate can be melted in short microwave bursts if no double boiler is available.
