A family-friendly breakfast casserole featuring crispy tater tots, savory sausage, fluffy eggs, and melted cheddar cheese, perfect for busy mornings and gatherings.

  • 32 ounces frozen tater tots
  • 1 pound breakfast sausage, cooked and crumbled
  • 8 large eggs, beaten
  • 1 cup milk (whole or 2%)
  • 2 cups shredded cheddar cheese
  • 1 small onion, finely chopped
  • 1/2 cup green bell pepper, diced (optional)
  • 1 teaspoon garlic powder
  • Salt and black pepper to taste
  • 2 tablespoons fresh parsley, chopped (for garnish)
  • Optional add-ins: 1 cup fresh spinach (chopped), or swap sausage for cooked bacon

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook the sausage in a large skillet over medium heat until browned and cooked through, about 7–8 minutes. Remove with a slotted spoon and drain excess grease.
  3. In the same skillet, sauté chopped onion and bell pepper for 3–4 minutes until softened. Add garlic powder, salt, and pepper.
  4. Stir the cooked sausage back into the skillet with the veggies and set aside to cool slightly.
  5. In a large bowl, whisk together eggs, milk, and a pinch of salt and pepper until fully combined and slightly frothy.
  6. Spread half of the sausage and veggie mixture evenly in the bottom of a 9×13-inch baking dish. Sprinkle 1 cup of shredded cheddar cheese over the sausage layer.
  7. Pour half of the egg mixture over the cheese and sausage layer evenly.
  8. Arrange half of the frozen tater tots in a single, even layer on top of the egg mixture.
  9. Repeat layers with the remaining sausage and veggie mixture, remaining egg mixture, and remaining tater tots.
  10. Sprinkle the remaining 1 cup of shredded cheddar cheese evenly over the final tater tot layer.
  11. Bake for 40–45 minutes until eggs are set, cheese is bubbly, and tater tots are crispy and golden brown.
  12. Let the casserole rest for 5 minutes before sprinkling with chopped fresh parsley and serving.

Notes

Do not thaw tater tots before baking to keep them crispy. Cook sausage thoroughly and drain excess grease to avoid sogginess. You can assemble the casserole the night before and refrigerate, adding tater tots just before baking. If tater tots brown too quickly but eggs are not set, cover loosely with foil halfway through baking.
