Instructions

  1. Wash and dry about 20 medium strawberries thoroughly to remove all moisture (about 5 minutes).
  2. Using a sharp paring knife, slice strawberries thinly lengthwise from tip toward stem into 4–6 petals per berry. Set aside (10 minutes).
  3. Melt the chopped chocolate with 1 tablespoon vegetable or coconut oil in a microwave-safe bowl in 20-second intervals, stirring between bursts until smooth and glossy, or melt over a double boiler (5 minutes).
  4. Dip each strawberry petal by holding the wider end and dipping the pointed tip into the melted chocolate, then place on parchment paper to set. Repeat for all petals (15 minutes).
  5. Assemble the roses on a serving plate by arranging one dipped petal in a small circle for the center, then layer petals around it slightly overlapping to mimic rose petals. Use a toothpick to help position petals gently (10 minutes).
  6. Chill the assembled strawberry roses in the refrigerator for about 20 minutes to let the chocolate harden fully.

Ensure strawberries are completely dry before dipping to prevent chocolate from seizing. Use a sharp knife for thin, neat slices. Work quickly as chocolate hardens fast.
