  • 6 ounces (170g) semisweet or bittersweet chocolate, chopped
  • 1/2 cup (120ml) heavy cream
  • 1 teaspoon vanilla extract
  • 1 cup fresh strawberries, washed and hulled
  • 1 ripe banana, peeled and sliced
  • 1/2 cup pineapple chunks, fresh or canned
  • Marshmallows (optional), a handful

Instructions

  1. Finely chop 6 ounces (170g) of semisweet or bittersweet chocolate into small pieces and set aside.
  2. Pour 1/2 cup (120ml) of heavy cream into a small saucepan and warm over medium-low heat until just about to simmer (3-4 minutes). Do not boil.
  3. Remove the cream from heat and immediately add the chopped chocolate. Let sit for 1 minute to soften, then gently stir with a heatproof spatula until smooth and glossy.
  4. Stir in 1 teaspoon of vanilla extract. Taste and adjust if desired.
  5. Wash and prep the fruit: hull about 1 cup of strawberries, slice 1 ripe banana, and cut 1/2 cup of pineapple into bite-sized chunks. Arrange on a serving plate.
  6. Pour the melted chocolate into a fondue pot with a low flame or a small ceramic bowl. Keep warm by stirring occasionally if no warmer is available.
  7. Serve immediately with skewers or fondue forks for dipping fruit and optional marshmallows or pound cake cubes.

Notes

Use a double boiler to gently melt chocolate to avoid scorching. Do not let water touch the chocolate to prevent seizing. Rewarm gently if chocolate thickens. Vanilla extract adds depth and should not be skipped. For dairy-free, substitute heavy cream with coconut cream and use dairy-free dark chocolate.
