Decadent Double Chocolate Fudge Cookies

Soft, fudgy double chocolate cookies with a perfect balance of deep chocolate flavor and a slightly crisp edge. Easy to make and perfect for any occasion.

  • 1 ½ cups (190 g) all-purpose flour
  • ½ cup (45 g) unsweetened cocoa powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup (113 g) unsalted butter, melted and slightly cooled
  • ¾ cup (150 g) granulated sugar
  • ¼ cup (50 g) packed brown sugar
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 1 cup (170 g) semisweet or bittersweet chocolate chips
  • 2 ounces (56 g) melted dark chocolate (optional but recommended)

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper or silicone baking mats.
  2. In a medium bowl, sift together the all-purpose flour, cocoa powder, baking soda, and salt. Set aside.
  3. In a large bowl, whisk together the melted unsalted butter, granulated sugar, and brown sugar until smooth and creamy.
  4. Beat in the large egg and vanilla extract until fully incorporated and the mixture is glossy and smooth.
  5. Gradually add the dry mixture to the wet ingredients, folding gently with a rubber spatula until just combined. Do not overmix.
  6. Melt the dark chocolate in the microwave in 20-second intervals, stirring between each, then let cool slightly. Fold the melted chocolate and chocolate chips into the dough.
  7. Using a cookie scoop or tablespoon, drop dough balls about 2 inches apart on the prepared baking sheets.
  8. Bake for 10-12 minutes until edges look set and slightly cracked but centers remain soft.
  9. Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

Do not overmix the dough to avoid tough cookies. Melt butter and chocolate gently and let cool before mixing with eggs to prevent scrambling. Pull cookies out when centers are still soft for fudgy texture. Chilling dough for 30 minutes can help control spread but is optional. Store cookies in an airtight container with a slice of bread to keep them soft longer.
