  • 1 9-inch pre-made graham cracker crust or homemade chocolate pie crust
  • 8 oz bittersweet or semisweet chocolate, chopped
  • 1/2 cup unsalted butter, softened
  • 3 large eggs, room temperature
  • 1 cup powdered sugar
  • 1 tsp pure vanilla extract
  • 1/4 tsp salt
  • 1 cup heavy whipping cream, chilled
  • 2 tbsp powdered sugar (optional for whipped cream)
  • Chocolate shavings or cocoa powder for garnish

Instructions

  1. Chop 8 oz bittersweet chocolate into small pieces. Melt gently using a double boiler or microwave in 15-second bursts until smooth. Let cool for about 5 minutes.
  2. Beat 1/2 cup softened unsalted butter with 1 cup powdered sugar using an electric mixer until light and fluffy, about 3-4 minutes.
  3. Add 3 large room-temperature eggs one at a time to the butter-sugar mixture, beating well after each addition. Whip for about 5 minutes until smooth and creamy.
  4. Slowly pour the cooled melted chocolate into the egg mixture while beating on low speed. Add 1 tsp vanilla extract and 1/4 tsp salt. Beat until fully combined and glossy.
  5. Pour the chocolate filling into the 9-inch graham cracker crust or homemade crust. Smooth the top with a spatula. Refrigerate for at least 4 hours or overnight to set.
  6. Before serving, whip 1 cup chilled heavy cream with 2 tbsp powdered sugar until soft peaks form. Spread or pipe over the set chocolate filling.
  7. Garnish with chocolate shavings or dust with cocoa powder. Slice with a sharp knife dipped in hot water for clean cuts. Serve chilled.
