These fudgy, bite-sized brownie treats are decorated with black fondant grad caps and edible gold tassels, perfect for celebrating graduations with a festive and delicious touch.

  • 1/2 cup (113g) unsalted butter, melted
  • 1 cup (200g) granulated sugar
  • 2 large eggs, room temperature
  • 1 tsp pure vanilla extract
  • 3/4 cup (95g) all-purpose flour
  • 1/3 cup (35g) unsweetened cocoa powder
  • 1 tsp instant coffee powder (optional)
  • 1/4 tsp salt
  • About 8 oz (225g) black fondant
  • 1 small jar edible gold paint or gold luster dust
  • 1 tbsp edible glue or light corn syrup
  • Thin black licorice strings or thin fondant strips for tassels
  • Optional: powdered sugar for dusting
  • Optional: mini cupcake liners for presentation

Instructions

  1. Preheat oven to 350°F (175°C). Grease or line an 8×8 inch baking pan with parchment paper.
  2. In a large bowl, whisk melted butter and granulated sugar until combined. Add eggs one at a time, mixing well after each addition, then stir in vanilla extract.
  3. In a separate bowl, sift together flour, cocoa powder, instant coffee powder (if using), and salt.
  4. Gradually fold dry ingredients into wet ingredients with a spatula until just combined. Avoid overmixing.
  5. Pour batter into prepared pan and smooth the surface. Tap pan gently to remove air bubbles.
  6. Bake for 20-25 minutes. Check doneness with a toothpick; it should come out with a few moist crumbs.
  7. Cool brownies completely in the pan on a wire rack (at least 1 hour).
  8. Cut brownies into 1.5-inch (4 cm) squares using a sharp knife.
  9. Roll out black fondant to about 1/8 inch (3 mm) thickness. Cut fondant into squares matching brownie size.
  10. Lightly brush top of each brownie with edible glue or corn syrup and press fondant square on top.
  11. Cut tiny strands from black licorice or roll thin fondant strips for tassels. Paint tassels with edible gold paint or dust.
  12. Attach a tassel to one corner of each fondant cap using a dab of edible glue.
  13. Let decorated brownie bites set for 15-20 minutes before serving.

Notes

Do not overbake brownies to keep a fudgy center. Cool brownies completely before applying fondant to ensure it sticks well. Use cornstarch or powdered sugar lightly when rolling fondant to prevent sticking. For gold tassels, apply two thin coats of edible gold paint or luster dust mixed with clear alcohol or lemon extract for best shine. Fondant cracks can be softened with kneading or a drop of water. Store brownies in airtight container at room temperature up to 3 days, refrigerate up to a week, or freeze up to 3 months with parchment paper between layers.
