Decadent Salted Caramel Truffles

Silky-smooth truffles with a rich salted caramel center, perfect for gifting or indulging yourself.

Ingredients

  • 1 cup granulated sugar
  • 6 tablespoons unsalted butter, cubed
  • 1/2 cup heavy cream, room temperature
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon flaky sea salt (plus more for topping)
  • 12 ounces semisweet or dark chocolate, finely chopped
  • 1 tablespoon coconut oil or vegetable oil

Instructions

  1. In a heavy-bottomed saucepan, heat the sugar over medium heat, stirring constantly until melted and golden brown.
  2. Add the butter carefully and stir until combined.
  3. Gradually add the heavy cream while stirring, then cook for another minute or two until smooth.
  4. Remove from heat and stir in the vanilla extract and sea salt. Let the caramel cool to room temperature, then refrigerate for 1-2 hours until firm.
  5. Scoop out small portions of the chilled caramel and roll them into balls using your hands. Place the balls on a parchment-lined baking sheet and freeze for at least 30 minutes.
  6. Using a double boiler or microwave, gently melt the chocolate and coconut oil until smooth. Let it cool slightly.
  7. Using a fork, dip each frozen caramel ball into the melted chocolate, ensuring it’s fully coated. Tap off excess chocolate and place the truffles back on the parchment-lined baking sheet.
  8. Sprinkle each truffle with a pinch of flaky sea salt while the chocolate is still wet. Let them set at room temperature or in the fridge until firm.

Notes

Take your time while melting the sugar to avoid burning it. Sprinkle flaky sea salt immediately after dipping the truffles to ensure it sticks.
