Delicious Fudgy One-Bowl Brownies with Salted Caramel Swirl

  • 1 ½ cups (300g) granulated sugar
  • ½ cup (100g) brown sugar, packed
  • 3 large eggs, room temperature
  • 2 teaspoons pure vanilla extract
  • 1 cup (125g) all-purpose flour
  • ¾ cup (75g) unsweetened cocoa powder
  • ½ teaspoon salt
  • ½ cup (120ml) salted caramel sauce (homemade or store-bought)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease an 8×8-inch baking pan with butter or non-stick spray, or line it with parchment paper with an overhang.
  2. Melt the butter in a mixing bowl using the microwave in 30-second bursts or over a double boiler. Stir in granulated and brown sugars until combined and glossy, about 1-2 minutes.
  3. Add eggs one at a time, whisking vigorously after each addition. Stir in vanilla extract.
  4. In a separate small bowl, sift together cocoa powder, all-purpose flour, and salt.
  5. Gradually fold the dry ingredients into the wet mixture using a spatula until just combined.
  6. Pour half the batter into the prepared pan and spread evenly. Dollop half of the salted caramel sauce over the batter.
  7. Spread the remaining brownie batter on top, then drop the remaining salted caramel sauce in spoonfuls over the top layer.
  8. Use a butter knife or skewer to gently swirl the caramel through the batter to create marbled patterns without over-swelling.
  9. Bake for 30-35 minutes, starting to check at 28 minutes with a toothpick; it should come out with moist crumbs but no wet batter.
  10. Cool in the pan on a wire rack for at least 45 minutes before slicing. For cleaner cuts, chill in the fridge for an hour after cooling.

Notes

Use room temperature eggs for better texture. Do not overmix the batter to keep brownies fudgy. Chilling the batter for 10-15 minutes helps the caramel swirl stay distinct. Let brownies cool completely before slicing for cleaner cuts. For dairy-free, substitute butter with coconut oil and use dairy-free caramel sauce.
