  • Popsicle sticks or wooden skewers

Instructions

  1. Line a baking sheet with parchment paper and set out popsicle sticks. Slice apples into 1/4 inch thick rounds, remove cores but leave skin on. Pat slices dry with paper towel.
  2. In a large saucepan over low heat, melt 3 tablespoons unsalted butter for about 2 minutes. Add 3 cups mini marshmallows and stir continuously until melted and smooth, about 3-5 minutes. Alternatively, melt in microwave in 30-second intervals, stirring between each.
  3. Remove pan from heat and fold in 6 cups rice cereal gently until evenly coated.
  4. Let mixture cool slightly. Take about 2 tablespoons of mixture and press onto one side of each apple slice, forming a compact rounded shape. Insert a popsicle stick into the rice crispy treat part securely.
  5. Arrange apple pops on the lined baking sheet and refrigerate for 15-20 minutes until firm.
  6. Melt 1 cup semi-sweet chocolate chips with 1 teaspoon oil in microwave-safe bowl in 30-second bursts, stirring until smooth and glossy.
  7. Dip the rice crispy treat side of each pop into melted chocolate, swirl to coat, and let excess drip off. Place back on parchment-lined tray. Optionally sprinkle with sea salt or sprinkles while chocolate is wet.
  8. Allow chocolate to set at room temperature or refrigerate for about 10 minutes until firm.
  9. Serve immediately or store in an airtight container in the refrigerator for up to 2 days.
