Delightful Galentine’s Girls’ Night Pink Snack Tray

A vibrant and easy-to-assemble pink-themed snack tray perfect for Galentine’s Day or any girls’ night, featuring a mix of sweet and savory bites that delight both the eyes and palate.

  • For the Beet Hummus: 15 oz (425 g) canned chickpeas, drained and rinsed
  • 1 medium cooked beet, peeled and chopped
  • 2 tbsp tahini
  • 2 tbsp fresh lemon juice
  • 1 clove garlic, minced
  • 2 tbsp olive oil
  • Salt to taste
  • For the Cranberry Goat Cheese Balls: 8 oz (225 g) soft goat cheese
  • 1/2 cup (75 g) dried cranberries, chopped
  • 1/2 cup (60 g) chopped pecans or walnuts
  • 1 tsp fresh thyme, chopped
  • 1 tbsp honey (optional)
  • Pink Snacks & Sides: 1 cup (150 g) strawberry and raspberry slices
  • 1 bunch pink radishes, thinly sliced
  • 1 bag (about 100 g) beet chips or pink tortilla chips
  • Mini pink macarons or strawberry shortbread cookies
  • Additional Dips (optional): Greek yogurt mixed with honey and a dash of pink food coloring or beet juice, or strawberry cream cheese spread
  • Fresh Herbs & Garnishes: edible flowers (pink carnations or rose petals), fresh mint leaves, pink peppercorns

Instructions

  1. Prepare the Beet Hummus (10-15 minutes): Drain and rinse canned chickpeas. In a food processor, combine chickpeas, cooked beet, tahini, lemon juice, garlic, olive oil, and salt. Blend until smooth, adding water or olive oil if needed. Taste and adjust seasoning. Refrigerate.
  2. Make the Cranberry Goat Cheese Balls (15 minutes): In a mixing bowl, combine goat cheese, dried cranberries, chopped nuts, thyme, and honey if using. Mix well and form into bite-sized balls. Refrigerate to firm up.
  3. Prepare Fresh Fruit and Veggies (5-10 minutes): Rinse and slice strawberries and raspberries. Thinly slice pink radishes. Arrange on serving tray.
  4. Arrange Chips and Sweets: Place beet or pink tortilla chips in a bowl or on the tray. Add mini pink macarons or strawberry shortbread cookies to a small dish.
  5. Optional Dips: Mix Greek yogurt with honey and pink food coloring or beet juice. Spoon into a ramekin and add to the tray.
  6. Assemble the Tray (10 minutes): Place bowls of beet hummus, goat cheese balls, and optional dips evenly on the tray. Fill gaps with fruit, radishes, chips, and sweets. Garnish with mint leaves, edible flowers, and pink peppercorns.
  7. Chill the tray for about 10 minutes before serving to let flavors meld and keep everything fresh.

Notes

Use firm, small-curd goat cheese for best texture. Fresh cooked beets give more vibrant color than canned. For dairy-free, substitute goat cheese with cashew cheese. Prepare ingredients close to serving time for freshness. Chill tray before serving for best flavor. Leftovers keep up to 2 days refrigerated; store chips separately to maintain crunch.
