  • 1 large English cucumber, thinly sliced

  • 1 teaspoon freshly squeezed lemon juice
  • Pinch of salt, to taste
  • Freshly ground black pepper (optional)
  • Butter, softened (optional, for spreading on bread edges to prevent sogginess)

Instructions

  1. Rinse and dry the English cucumber. Using a sharp knife or mandoline, slice the cucumber into thin rounds about 1/8 inch thick. Set aside.
  2. In a mixing bowl, combine softened cream cheese, chopped fresh dill, lemon juice, and a pinch of salt. Mix until smooth and well blended. Adjust seasoning and add black pepper if desired.
  3. Lay out 8 slices of white bread on a clean surface. If desired, lightly spread softened butter on one side of each slice to prevent sogginess.
  4. Spread the cream cheese mixture evenly on the unbuttered side of 4 bread slices.
  5. Layer the cucumber slices on top of the cream cheese, overlapping slightly to cover the surface.
  6. Top with the remaining 4 bread slices, buttered side down.
  7. Trim crusts if desired and cut each sandwich diagonally into halves or quarters.
  8. Serve immediately or cover tightly and refrigerate if making ahead.
