A quick and easy recipe for crispy baked chicken thighs coated in a sweet and tangy honey mustard glaze, perfect for weeknight dinners or casual entertaining.

Ingredients

Scale
  • 4 bone-in, skin-on chicken thighs
  • 3 tablespoons honey (raw or wildflower preferred)
  • 2 tablespoons Dijon mustard
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • Salt and black pepper to taste (kosher salt recommended)
  • 1 tablespoon fresh lemon juice (optional)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Pat the chicken thighs dry with paper towels to remove any moisture.
  3. In a mixing bowl, whisk together honey, Dijon mustard, olive oil, garlic powder, smoked paprika, lemon juice (if using), salt, and pepper.
  4. Place the chicken thighs skin-side up on a baking sheet lined with parchment paper.
  5. Brush each thigh generously with the honey mustard glaze, coating under the skin if possible.
  6. Bake for 25 minutes.
  7. Flip the chicken thighs carefully using tongs, brush the other side with remaining glaze, and return to the oven for an additional 10-15 minutes.
  8. Check for doneness; the internal temperature should reach 165°F (74°C). If needed, broil for 1-2 minutes to crisp the skin, watching closely to avoid burning.
  9. Remove from the oven and let rest for 5 minutes before serving.

Notes

Drying the chicken skin thoroughly before baking is key to achieving crispy skin. Avoid overcrowding the baking sheet to prevent steaming. Use a meat thermometer to ensure the chicken reaches 165°F (74°C) for safe consumption. Reheat leftovers in a skillet or oven to maintain crispiness; avoid microwaving.
