  • 4 bone-in, skin-on chicken thighs
  • 3 tablespoons honey
  • 2 tablespoons Dijon mustard
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika (optional)
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a medium bowl, whisk together honey, Dijon mustard, olive oil, garlic powder, smoked paprika (if using), lemon juice, salt, and black pepper until smooth.
  3. Pat the chicken thighs dry with paper towels.
  4. Toss the chicken thighs in the marinade, making sure each piece is evenly coated. Let them sit for at least 10 minutes at room temperature or cover and refrigerate for up to 2 hours.
  5. Arrange the chicken skin-side up on a wire rack set over a rimmed baking sheet.
  6. Bake for 35-40 minutes until the skin is golden and crispy and the internal temperature reaches 165°F (74°C). If needed, broil for 2-3 minutes at the end to crisp the skin, watching carefully to avoid burning.
  7. Remove from oven and let rest for 5 minutes before serving.

Notes

Pat chicken dry before marinating and again before baking for extra crispy skin. Use a wire rack to allow air circulation and fat to drip away. Bake at high heat (425°F) to crisp skin without drying meat. Broil briefly if skin is not crispy enough. Let chicken rest after baking to redistribute juices. Marinate at least 10 minutes or up to 2 hours for best flavor.
