  • 1 pound fresh asparagus spears, trimmed and washed
  • 810 thin slices prosciutto
  • 1 tablespoon extra virgin olive oil
  • Freshly ground black pepper, to taste
  • Lemon zest from one lemon (optional)
  • Grated Parmesan cheese (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Trim the asparagus by snapping or cutting off the tough, woody ends about 1 to 2 inches from the bottom.
  3. Dry the asparagus thoroughly with a kitchen towel or paper towels.
  4. Group asparagus spears into bundles of about 3-4 spears each.
  5. Wrap each bundle with one slice of prosciutto, spiraling from the bottom upwards, leaving the tips mostly exposed.
  6. Place the bundles on a prepared baking sheet, spacing them apart for even air circulation.
  7. Drizzle olive oil lightly over the bundles and sprinkle with freshly ground black pepper. Add lemon zest and Parmesan cheese if using.
  8. Bake for 12-15 minutes, checking after 10 minutes to ensure prosciutto is crisp and asparagus is tender but not mushy.
  9. Remove from oven and let sit for a couple of minutes before serving.

Notes

Drying the asparagus thoroughly is essential to achieve crispy prosciutto. Avoid overcrowding the baking sheet to prevent steaming. Use thin prosciutto slices for best crispiness. Rotate the baking sheet halfway through baking for even cooking. If prosciutto crisps faster than asparagus cooks, tent bundles loosely with foil after 8 minutes.
