  • 2 tablespoons unsalted butter, softened (European-style butter preferred)
  • 1 tablespoon mayonnaise (optional)
  • 1 teaspoon Dijon mustard (optional)
  • Freshly cracked black pepper, to taste
  • Optional: a few spinach leaves or arugula for freshness

Instructions

  1. Cook the bacon: Place bacon slices in a cold skillet and heat to medium. Cook 8-10 minutes, flipping occasionally, until crispy but not burnt. Drain on paper towels.
  2. Prepare the bread: Spread softened butter on one side of each bread slice. On the unbuttered side, spread mayonnaise and Dijon mustard if using.
  3. Assemble the sandwich: Place one slice of bread, buttered side down, on a cutting board. Layer one slice of Gouda, all the crispy bacon, then the second slice of Gouda. Add greens if desired. Top with the second slice of bread, buttered side up.
  4. Toast the sandwich: Heat skillet over medium-low heat. Place sandwich in pan and press gently with a spatula. Cook 4-5 minutes until golden brown, then flip and cook another 3-4 minutes until cheese melts and bread is toasted.
  5. Check doneness: Both sides should be golden brown with melted cheese. If bread browns too fast, lower heat and cover pan briefly to melt cheese.
  6. Serve warm: Let sandwich rest for 30 seconds to 1 minute before cutting diagonally to help cheese set.
