A low-carb, keto-friendly breakfast casserole made with eggs, ham, Swiss cheese, and cream. It’s quick to prepare, perfect for meal prep, and delivers rich, nutty flavor without any bread or crust.

Ingredients

Scale
  • 8 large eggs, room temperature
  • 1 cup (240 ml) heavy cream
  • ½ cup (120 ml) whole milk
  • 2 cups (about 300 g) diced cooked ham
  • 2 cups (200 g) shredded Swiss cheese
  • ½ cup (50 g) shredded Gruyère cheese (optional but recommended)
  • 1 tablespoon Dijon mustard
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper, freshly ground
  • 2 tablespoons fresh chives or parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish with butter or non-stick spray.
  2. In a large mixing bowl, whisk together the eggs, heavy cream, whole milk, Dijon mustard, garlic powder, onion powder, salt, and black pepper for about 1 minute until pale yellow and slightly frothy.
  3. Spread the diced ham evenly across the bottom of the prepared baking dish. Sprinkle about 1½ cups of the shredded Swiss cheese (and Gruyère, if using) over the ham. Reserve the remaining ½ cup for the top.
  4. Slowly and evenly pour the egg mixture over the ham and cheese. Gently shake the dish or use a spatula to ensure even distribution. Do not stir.
  5. Sprinkle the reserved ½ cup of Swiss cheese over the top.
  6. Bake on the middle rack for 35-40 minutes, until the edges are set and the center is slightly jiggly. If the top browns too quickly, tent loosely with foil around the 25-minute mark.
  7. Let the casserole rest for 10 minutes before slicing. This allows it to finish setting.
  8. Garnish with fresh chives or parsley, slice into squares, and serve warm.

Notes

For best texture, use room-temperature eggs and shred your own cheese. Avoid overbaking—pull when center is slightly jiggly. Let rest for 10 minutes before serving. Can be assembled the night before; add 5-10 minutes to baking time if starting from cold. For extra creaminess, use a water bath.
