These skewers combine fresh mozzarella, salami, olives, cherry tomatoes, and basil, drizzled with a sweet and tangy balsamic glaze. Ready in under 15 minutes, they make an impressive and easy appetizer for any occasion.

  • Fresh mozzarella balls (bocconcini), drained
  • Salami slices, folded or rolled (Genoa salami recommended)
  • Cherry tomatoes, washed and dried
  • Seedless green or black olives, pitted
  • Fresh basil leaves
  • Mini breadsticks or thin crackers (optional)
  • 1 cup balsamic vinegar
  • 2 tablespoons honey or brown sugar
  • Pinch of salt (optional)

Instructions

  1. Make the Balsamic Glaze: Pour 1 cup (240 ml) of balsamic vinegar into a small saucepan. Add 2 tablespoons (30 g) of honey or brown sugar and stir to combine.
  2. Place the saucepan over medium heat and bring to a gentle boil.
  3. Lower the heat to a simmer and let it reduce, stirring occasionally, until the mixture thickens to a syrupy consistency, about 8–10 minutes. It’s ready when it coats the back of a spoon.
  4. Remove from heat and let it cool slightly. Add a pinch of salt if desired to balance the sweetness.
  5. Prepare the Skewers: Lay out all ingredients within reach.
  6. Thread one cherry tomato onto a skewer, followed by a folded slice of salami, a mozzarella ball, an olive, and a fresh basil leaf.
  7. Repeat the layering for each skewer, aiming for 3–5 bites per skewer.
  8. Optional: Add a mini breadstick or cracker at the end of the skewer for added crunch and presentation.
  9. Arrange the skewers on a platter and drizzle generously with the cooled balsamic glaze right before serving.
  10. Enjoy immediately for the freshest flavor or cover and refrigerate for up to 2 hours before serving.

Notes

Use toothpicks to pre-pierce olives for easier threading. Pat mozzarella dry to avoid sogginess. Prepare balsamic glaze first and let cool before drizzling. Keep skewers chilled but serve at room temperature for best flavor. Optional breadsticks or crackers can be omitted for gluten-free diets.
