Easy Honey Lime Salmon Foil Packets

A quick and flavorful salmon dinner cooked in foil packets with a sweet and zesty honey lime glaze, perfect for busy weeknights.

  • 4 salmon fillets (about 6 ounces / 170 grams each, skin-on or skinless)
  • 2 tablespoons honey
  • 2 tablespoons fresh lime juice
  • 2 garlic cloves, minced
  • 1 tablespoon olive oil
  • Salt and black pepper, to taste
  • 1/4 teaspoon red pepper flakes (optional)
  • Small handful fresh cilantro or parsley, chopped
  • Optional vegetables for roasting: thinly sliced zucchini, bell peppers, or snap peas

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a small bowl, whisk together honey, fresh lime juice, minced garlic, olive oil, salt, black pepper, and red pepper flakes if using until smooth and glossy.
  3. Lay out four large sheets of aluminum foil (about 12 inches square). If including veggies, arrange a thin layer of sliced zucchini or bell peppers in the center of each foil piece.
  4. Place one salmon fillet on top of the veggies or directly on the foil if going veggie-free. Season each fillet lightly with salt and pepper.
  5. Brush the honey-lime glaze generously over each salmon fillet, covering the top and sides.
  6. Sprinkle chopped fresh cilantro or parsley over the salmon.
  7. Fold the foil over the salmon and veggies to create a sealed packet, tightly crimping the edges to trap steam and juices inside.
  8. Place the foil packets on a baking sheet and bake in the preheated oven for 15-18 minutes, depending on the thickness of your salmon, until the flesh is opaque and flakes easily with a fork.
  9. Carefully open the foil packets (watch for hot steam) and serve immediately.

Notes

Use fresh lime juice for best flavor. If including vegetables, slice them thinly for even cooking. Rotate baking sheet halfway through if needed for even cooking. Avoid overcooking to keep salmon moist and flaky. Leftovers keep well refrigerated for up to two days and reheat gently to avoid drying out.
