  • 2 tablespoons Dijon mustard
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika (smoked or regular)
  • 1 tablespoon olive oil

  • Freshly ground black pepper to taste
  • Optional fresh herbs (thyme or rosemary sprigs) for garnish or glaze

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Pat the chicken thighs dry with paper towels to ensure crispiness.
  3. In a mixing bowl, whisk together honey, Dijon mustard, garlic powder, paprika, olive oil, salt, and black pepper.
  4. Coat the chicken thighs evenly with the honey mustard glaze using a brush or your hands.
  5. Place the chicken skin-side up on a wire rack set over a foil-lined baking sheet. If no rack is available, place directly on the lined baking sheet.
  6. Bake for 35-40 minutes, basting halfway through with any remaining glaze and optionally flipping the chicken for even coating.
  7. Check that the internal temperature reaches 165°F (74°C) and the skin is golden brown and crispy.
  8. Let the chicken rest for 5 minutes before serving to keep it juicy and allow the glaze to set.
  9. Optional: If skin is not crispy enough, broil for 2-3 minutes watching closely to avoid burning.
