  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 2 tablespoons granulated sugar
  • 3/4 cup (about 115 g) raisins, soaked briefly in warm water or tea
  • 1 3/4 cups (420 ml) buttermilk
  • 3 tablespoons unsalted butter, melted and cooled

Instructions

  1. Preheat your oven to 425°F (220°C) and line your baking sheet or skillet with parchment paper.
  2. Soak the raisins in warm water or tea for about 10 minutes, then drain well.
  3. In a large bowl, whisk together the flour, baking soda, baking powder, salt, and sugar.
  4. Stir the drained raisins into the dry ingredients until evenly distributed.
  5. In a separate bowl, whisk together the buttermilk and melted butter.
  6. Pour the wet mixture into the dry ingredients and gently stir with a wooden spoon or your hands until just combined. The dough will be sticky and shaggy.
  7. Turn the dough onto a lightly floured surface and pat into a round shape about 7 inches wide and 2 inches thick. Place on the prepared pan.
  8. Score a deep cross about 1/2 inch deep across the top of the dough with a sharp knife.
  9. Bake for 30-35 minutes until the crust is golden brown and the bottom sounds hollow when tapped.
  10. Transfer to a wire rack and cool for at least 30 minutes before slicing.

Notes

Do not overmix the dough to keep the bread tender. Soak raisins before adding to keep them plump and juicy. Use real buttermilk or a substitute made with milk and lemon juice or vinegar. Score the loaf to help it expand and bake evenly. Check doneness by tapping the bottom for a hollow sound or using a thermometer (200°F internal).
