  • 1 pound (450g) ground beef (80/20 blend recommended)
  • 1 large yellow onion, thinly sliced
  • 2 cloves garlic, minced
  • ½ cup (50g) breadcrumbs, plain or seasoned
  • ¼ cup (60ml) milk, room temperature
  • 1 large egg, room temperature
  • 1 tablespoon Worcestershire sauce
  • Salt and pepper to taste
  • 2 tablespoons (28g) butter
  • 2 tablespoons (16g) all-purpose flour
  • 2 cups (480ml) beef broth, preferably low sodium
  • 1 teaspoon fresh or dried thyme (optional)

Instructions

  1. In a mixing bowl, combine ground beef, breadcrumbs, milk, egg, Worcestershire sauce, minced garlic, salt, and pepper. Mix gently until just combined. Divide into 4 equal portions and shape each into an oval patty about ¾ inch (2 cm) thick. Set aside.
  2. Heat 1 tablespoon butter in a large skillet over medium-high heat. Add patties and cook 3-4 minutes per side until browned but not fully cooked. Remove patties and cover loosely with foil.
  3. Reduce heat to medium, add remaining 1 tablespoon butter and sliced onions to the skillet. Cook, stirring frequently, until onions are deep golden brown and caramelized (8-10 minutes). Add a splash of water or beef broth if pan gets dry.
  4. Sprinkle flour over caramelized onions and stir to coat. Cook 1-2 minutes to remove raw flour taste.
  5. Slowly pour in beef broth while stirring constantly to avoid lumps. Add thyme if using. Bring to a simmer and let gravy thicken, stirring occasionally. Season with salt and pepper.
  6. Return patties to skillet, nestling them into the gravy. Cover and simmer gently for 5-7 minutes until patties are cooked through (internal temp 160°F / 71°C) and juicy.
  7. Serve hot with extra gravy spooned over the patties.

Notes

Do not overmix the meat to keep patties tender. Caramelize onions slowly for best flavor. Use a spatula with a thin edge to flip patties gently. For gluten-free, substitute breadcrumbs with almond flour or gluten-free breadcrumbs. For dairy-free, use olive oil instead of butter and dairy-free milk alternative.
