These Easy Mini Turkey Club Pinwheels are quick, simple, and perfect for lunch boxes, combining smoky turkey, crispy bacon, fresh veggies, and creamy mayo in a soft tortilla roll.

  • 8 large flour tortillas (10-inch size)
  • 12 ounces thinly sliced smoked turkey breast
  • 6 slices bacon, cooked crispy and chopped
  • 1 cup shredded iceberg or romaine lettuce
  • 1 medium tomato, thinly sliced, seeds removed
  • ½ cup mayonnaise (regular or light)
  • 1 tablespoon Dijon or yellow mustard
  • 4 ounces sliced Swiss or cheddar cheese, thinly sliced
  • Optional: pinch of black pepper or dash of garlic powder in mayo spread

Instructions

  1. Cook the bacon in a skillet over medium heat until crispy, about 6-8 minutes, turning as needed. Drain on paper towels and chop once cool.
  2. In a small bowl, mix mayonnaise with mustard and optional black pepper or garlic powder until smooth.
  3. Wash and shred lettuce. Thinly slice tomato, removing seeds. Slice cheese thinly.
  4. Place one tortilla flat on a clean surface. Spread about 2 tablespoons of the mayo-mustard mixture evenly, leaving a small border around edges.
  5. Layer 3-4 slices of turkey evenly over the spread. Sprinkle chopped bacon, then add shredded lettuce, tomato slices, and cheese slices.
  6. Roll the tortilla tightly but gently to avoid tearing. Wrap snugly in plastic wrap and refrigerate for 10-15 minutes to set.
  7. Remove plastic wrap and cut the roll into 1 to 1.5-inch thick pinwheels using a sharp serrated knife, aiming for 8-10 pieces per tortilla.
  8. Arrange pinwheels in lunch containers or plates. Serve immediately or keep chilled until lunchtime.

Notes

Warm tortillas in microwave for 15 seconds if stiff to make rolling easier. Chill wrapped pinwheels before slicing to keep shape. Use a sharp serrated knife to avoid squashing. Remove tomato seeds to prevent sogginess. Customize spread with ranch or pesto for variety. Store wrapped in refrigerator up to 2 days or freeze up to 1 month.
