Easy No-Bake Cherry Cheesecake Parfaits

A quick and easy no-bake dessert featuring layers of creamy cheesecake, crunchy graham cracker crumbs, and sweet cherry topping, perfect for summer treats.

Ingredients

  • 1 1/2 cups graham crackers, crushed
  • 5 tablespoons unsalted butter, melted
  • 8 ounces cream cheese, softened
  • 3/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream, cold
  • Cherry pie filling or canned cherries in syrup
  • Fresh cherries, pitted and chopped (optional)

Instructions

  1. Crush 1 1/2 cups (150g) of graham crackers into fine crumbs. Combine with 5 tablespoons (70g) melted unsalted butter in a bowl. Mix until the crumbs are evenly coated and look like wet sand. Set aside.
  2. In a large bowl, beat 8 ounces (225g) of softened cream cheese with 3/4 cup (90g) powdered sugar and 1 teaspoon vanilla extract until smooth and creamy, about 2-3 minutes on medium speed.
  3. In a separate chilled bowl, whip 1 cup (240ml) heavy cream until soft peaks form, about 4-5 minutes with an electric mixer on high. Be careful not to overwhip.
  4. Gently fold about a third of the whipped cream into the cream cheese mixture to lighten it, then fold in the rest carefully to keep the fluffiness.
  5. In serving glasses, layer 2 tablespoons of the graham cracker crumb mixture, pressing down lightly. Add a generous layer of cheesecake filling (about 1/4 cup or 60ml), then 2 tablespoons (30g) of cherry pie filling. Repeat layers until glass is full, finishing with cherries on top.
  6. Place the assembled parfaits in the refrigerator for at least 2 hours to let the layers set and flavors meld. Overnight chilling is best.
  7. Just before serving, garnish with fresh mint leaves or extra crushed graham crackers if desired.

Notes

Soften cream cheese at room temperature or microwave for 10 seconds to avoid lumps. Chill mixing bowl and beaters for quicker whipping of cream. Fold whipped cream gently to keep air in. Chill parfaits at least 2 hours for best texture and flavor melding. Graham cracker crumbs should be coarse for best texture, not pulverized to dust.
