These no-bake energy bites combine creamy peanut butter with crunchy pretzels for a quick, salty-sweet snack perfect for on-the-go moments.

Ingredients

Scale
  • 1 cup creamy peanut butter (unsalted preferred)
  • 1/2 cup honey or maple syrup
  • 1 1/2 cups old-fashioned rolled oats
  • 1 cup crushed mini pretzels
  • 2 tablespoons chia seeds (optional)
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Gather and prep your ingredients: measure out peanut butter, honey, oats, crushed pretzels, chia seeds (if using), vanilla extract, and salt.
  2. In a mixing bowl, combine peanut butter, honey, and vanilla extract. Stir until smooth and glossy, about 2-3 minutes.
  3. Fold in rolled oats, chia seeds, and salt gently until evenly coated and mixture thickens.
  4. Gently fold in crushed pretzels, keeping some chunks intact for crunch.
  5. Using hands or a small cookie scoop, roll mixture into 1-inch balls, yielding about 20-24 bites.
  6. Place bites on a baking sheet or plate lined with parchment paper and refrigerate for at least 30 minutes to firm up.
  7. Store bites in an airtight container in the fridge for up to 7 days or freeze for longer storage.

Notes

Do not over-crush pretzels to maintain texture. Chill bites for at least 30 minutes to firm up and enhance flavor melding. Adjust oats or peanut butter/honey if mixture is too sticky or dry. Use gluten-free oats and pretzels for gluten-free version. Maple syrup can replace honey for a vegan option.
