Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, gently mix the drained peaches with granulated sugar (if using), ground cinnamon, and vanilla extract. Coat the peaches evenly without breaking them apart (3 to 5 minutes).
  3. Pour the peach mixture evenly into the bottom of a greased 9×13-inch baking dish, keeping about 2 tablespoons of syrup mixed in for moisture.
  4. Sprinkle the dry cake mix evenly over the peaches without stirring, covering them completely.
  5. In a small bowl, combine the chopped pecans, melted butter, and brown sugar. Stir until pecans are evenly coated.
  6. Sprinkle the pecan topping evenly over the dry cake mix layer without pressing down.
  7. Bake uncovered for 40 to 45 minutes until bubbly around the edges and the topping is golden brown and crunchy.
  8. Cool for at least 15 minutes before serving to allow juices to thicken and topping to set.
