  • 1 cup (90g) old-fashioned rolled oats
  • 2 tablespoons (30ml) honey
  • 2 tablespoons (20g) chia seeds (optional)

Instructions

  1. Mash 1 cup (about 2 medium) ripe bananas in a mixing bowl until smooth but still a bit chunky, about 2-3 minutes.
  2. Stir in 1/2 cup (125g) peanut butter and 2 tablespoons (30ml) honey until blended into a creamy, sticky batter. Add a teaspoon of water or more honey if mixture is too dry.
  3. Add 1 cup (90g) rolled oats and 2 tablespoons (20g) chia seeds. Stir thoroughly for about 2 minutes until oats are evenly coated but not soggy. Add more oats if mixture is too wet.
  4. Scoop out portions using hands or a tablespoon and roll into 1-inch (2.5 cm) balls, making about 12-15 bites. Wet hands slightly or chill mixture for 10 minutes if sticky.
  5. Place bites on a lined baking sheet or plate and refrigerate for at least 30 minutes to firm up.

Use overripe bananas with brown spots for natural sweetness and softness. Do not overmix to avoid gummy texture. Chilling for at least 30 minutes helps bites firm up and hold shape.
