  • 1 cup (227 grams) unsalted butter, softened
  • 1 cup (200 grams) granulated sugar
  • 1 large egg, room temperature
  • ½ cup (120 ml) eggnog
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground nutmeg
  • For the Nutmeg Frosting:
  • 2 cups (240 grams) powdered sugar
  • ½ cup (113 grams) unsalted butter, softened
  • 23 tablespoons (3045 ml) milk (whole milk preferred)
  • ½ teaspoon ground nutmeg
  • ½ teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a medium bowl, whisk together all-purpose flour, baking powder, salt, and ground nutmeg. Set aside.
  3. In a large bowl, beat softened unsalted butter and granulated sugar with an electric mixer on medium speed for 3-4 minutes until pale and fluffy.
  4. Beat in the large egg and vanilla extract until combined.
  5. Slowly mix in the eggnog until smooth.
  6. Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined. Do not overmix.
  7. Using a cookie scoop or tablespoon, drop rounded balls of dough about 2 inches apart onto the prepared baking sheets.
  8. Bake for 10-12 minutes until edges are lightly golden but centers still look soft.
  9. Let cookies rest on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
  10. To prepare the nutmeg frosting, beat softened unsalted butter until creamy. Gradually add powdered sugar, alternating with milk, beating until fluffy.
  11. Stir in ground nutmeg and vanilla extract. Adjust milk for preferred frosting thickness.
  12. Once cookies are completely cooled, spread or pipe the nutmeg frosting generously over each cookie.
  13. Optionally, sprinkle a tiny pinch of extra nutmeg or cinnamon on top for a festive look.

Notes

If dough is too sticky, refrigerate for 15 minutes before scooping. If frosting is too runny, add more powdered sugar to thicken. Use softened but not melted butter for best texture. Do not overmix dough to avoid tough cookies. Frost cookies only when completely cool to prevent melting.
