  • 6 ounces thinly sliced provolone cheese
  • 1 cup shredded iceberg lettuce
  • 1 medium tomato, thinly sliced

  • 1/2 cup sliced pepperoncini peppers
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and freshly ground black pepper, to taste
  • Pinch of crushed red pepper flakes (optional)

Instructions

  1. Prepare the Italian dressing: In a medium bowl, whisk together 3 tablespoons extra virgin olive oil, 2 tablespoons red wine vinegar, 1 teaspoon dried oregano, 1/2 teaspoon garlic powder, 1/2 teaspoon onion powder, salt, and pepper to taste. Add a pinch of crushed red pepper flakes if desired. Set aside to let flavors meld (about 5 minutes).
  2. Slice the sub roll lengthwise with a serrated knife, leaving a hinge on one side so it opens like a book (2-3 minutes).
  3. Spread 1/4 cup mayonnaise evenly on the bottom half of the roll and 2 tablespoons mustard on the top half (2 minutes).
  4. Layer the meats starting with Genoa salami, then capicola, and finally ham, overlapping slices to cover the length of the sandwich (5 minutes).
  5. Add provolone cheese slices evenly over the meats (2 minutes).
  6. Top with shredded iceberg lettuce, tomato slices, red onion rings, and pepperoncini slices, being careful not to overload (5 minutes).
  7. Drizzle the homemade Italian dressing evenly over the veggies (1-2 minutes).
  8. Close the sandwich along the hinge and wrap tightly in plastic wrap or parchment paper. Chill for at least 15 minutes before serving if possible (2 minutes).
