  • 4 medium-sized beets, roasted, peeled, and cubed
  • 1/2 cup crumbled feta cheese
  • 3 tablespoons extra-virgin olive oil
  • 2 tablespoons freshly squeezed lemon juice
  • 1 teaspoon honey (optional)
  • 2 tablespoons chopped parsley or dill
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash the beets thoroughly and wrap each one in aluminum foil. Place them on a baking sheet and roast for 45-60 minutes, or until fork-tender.
  3. Let the roasted beets cool slightly, then peel off the skin and cube them into bite-sized pieces.
  4. In a small bowl, whisk together the olive oil, lemon juice, honey (if using), and a pinch of salt and pepper.
  5. In a large mixing bowl, toss the cubed beets with the dressing until evenly coated.
  6. Sprinkle the crumbled feta and fresh herbs over the salad. Toss gently to combine.
  7. Transfer the salad to a serving platter and enjoy immediately, or chill it in the fridge for 20 minutes before serving.
